Mark Gilchrist is out after pigeons that are devastating a farmer’s pea crop – and there is a special poetry in the way the Sporting Shooter chef cooks up pigeon breast on a pea puree. He also gets to have a good rant about do-gooder bunny-hugging veggies, and even gets to teach an ex vegetarian about the joys of pigeon plucking. The shooting is legendary, the recipe delicious and even the ex-vegetarian is lovely. What more is there to an English summer’s day?
