Jason is guiding a friend, Daniel, on his first sika deer. Sika deer were introduced to Co Wicklow in 1860 and quickly became the county’s most prolific deer. Daniel is after a yeld hind and, once he has it, we go to butcher John Griffin to find out how to cut it up for the freezer.
