500g venison
1 heaped tbsp marmalade
Generous glass of port
400ml venison or beef stock
1 heaped tsp cinnamon
1 tsp nutmeg
½ tsp clove
½ tsp mace
Shortcrust pastry
Simmer for 1½ hours, leave the mixture to cool, then place in pastry
